3 New Recipes for Dinner

So I decided to cook 3 new recipes for dinner tonight since I had a terrible day today.  I cooked boneless chicken breasts stuffed with spinach and mozzarella and ricotta cheeses, sauteed garlic asparagus, and pasta with alfredo sauce.  The chicken was sort of bland...could have used more cheese in the middle (along with more spices!).  I had to do the sauce twice because I let it boil (when it explicitly said not to...it's been one of those days!) and the asparagus burned.

I guess it was a failed attempt at an amazing dinner, but I did try 3 new recipes (out of 101) for my project! I'm also working on the coloring book and went out to a new restaurant last week (The Black Whale in City Island in the Bronx) and it was really good!

That's it for tonight! I'll update again when I finish some more things on my list.  I'm working on organizing them in a binder with all the steps I need to do to get each project done.

Until next time...

Oh to be a kid again...

In my quest to complete my goals, I bought a coloring book--a Disney Princess one at that!  I wanted to add this to my list because I really enjoyed coloring as a child, and although I doubt it will bring me such joy as it did when I was 7, I really wanted something fairly mindless and enjoyable to put the stress away in a corner at least just for 15 minutes while I color a page.

In one way, this objective failed because  I found myself getting stressed out about getting the colors right and staying in the lines.  Some recent realizations about myself have shown me that I should loosen up a bit, so I'm going to stay true to my original objective and just wing it!

I also started my "random craft" project and am mosaic-ing a candle holder.  I just glued one side and have to wait to grout it, and hopefully it comes out nice.  If it doesn't, who cares?  I'll just try again!  Me doing this project does not have any dire consequences in my life.   I'm going to upload a picture of the candle holder when I'm done with it, regardless of how it turns out!

Other updates?  I've been journalling everyday for a couple days, so that's a start to the month journalling.  I like doing it in the morning with or before breakfast.  It's a nice calm way to start off the morning.

That's about it for now. I plan on printing the worksheets for this project out (http://101goalsin1001days.com/free-printable-worksheets/) to get a little more organized!  Until next time!
